Asparagus frittata

 INGREDIENTS

Medium eggs 6
Asparagus (to be cleaned) 500 g
Garlic 2 cloves
Grana Padano DOP (to be grated) 40 g
Extra virgin olive oil 3 tablespoons
Salt to taste
Black pepper to taste

PREPARATION

To prepare the asparagus frittata, first clean the asparagus: remove the final part of the stem and peel the remaining part. Leave the thinner asparagus whole and divide the larger ones in half lengthwise. In a non-stick pan with a diameter of 28 cm, heat a drizzle of oil with the poached garlic cloves, then arrange the asparagus without overlapping them, salt them and cover with the lid. Brown the asparagus over medium heat for 5-7 minutes, stirring often. In the meantime, beat the eggs in a bowl with a whisk, then add salt, pepper and the grated Grana Padano DOP. Mix everything together. When the asparagus is tender and braised, remove the lid and discard the garlic. Rearrange the asparagus with kitchen tongs to form a single layer that almost completely covers the bottom of the pan, then pour the egg mixture inside. Lower the heat slightly, cover with the lid and cook for about 8 minutes. Every now and then you can compact the edge of the frittata with the help of a spatula to obtain a rounded shape. Once the cooking time has elapsed, slide the frittata onto a plate and turn it upside down inside the pan, then cook for another 2 minutes without a lid. Transfer your asparagus frittata onto a serving plate and serve.

STORAGE

The asparagus frittata can be stored in the refrigerator for 1-2 days, in an airtight container.

ADVISE

You can garnish the asparagus frittata with aromatic herbs of your liking, for example basil, oregano, thyme, dill, marjoram or chives.
